Sorpotel is a dish made of Pork and dry red Chilli Masala along with an assortment of other spices and a dash of sugar. It is a traditional Goan dish is cooked for special occasions among the Catholics.
Pork Sorpotel, A Popular Traditional Goan Dish
Pork 500 gms
Onions 50 gms
Dried chillies 5 gms
A little Pepper
A little Jeera (Cummin seeds)
Turmeric powder 15 gms
Tamarind 15 gms
Sugar half tsp
Vinegar 15 ml
Salt to taste
Oil 15 ml
ginger 10 gms
garlic 10 gms
Boil the pork in sufficient quantity of water and then cut into small pieces.
Cut the onions fine and keep aside. Cut the ginger and garlic and grind the masala along with
the chillies, Pepper, Jeera, and Turmeric.
Heat oil in a pot and fry the cut onions. When they attain a light brown colour add a little pepper.
Grind the dry red chillies in vinegar to make a smooth paste. If required add a little more vinegar.
Then add the pork followed by red chilli paste tamarind, water, salt, sugar and masala.
Cook till the pork is soft.
If necessary add a little water. If the “sorpotel” is kept for a few days after cooking it
is even tastier.
